Fried Rice Pudding

A Rice Pudding Recipe as you have never seen (or tasted).


Fried Rice Pudding
Bom Sucesso Carolino Rice  – 150gr (5.2 oz)
Water – 1/4L  (1.05 c)
A pinch of salt
Fat milk – 1L (4.2 c)
Yolks – 5
Vanilla pod
Panko (Japanese bread crumbs) or homemade bread crumbs – 100g (3.5 oz)
Flour – 50g (1.7 oz)
Eggs – 2
Oil – 1Lt (4.2 c)


Lime and White Chocolate Filling
White Chocolate – 200gr (7 oz)
Lime (Juice and Zest) – 4


Lemon Curd
Lemons – 4
Eggs – 4
Unsalted Butter – 120gr (4.2 oz)
Sugar – 450gr (15.8 oz)


Basil Meringue
Egg White – 1
Icing Sugar – 325g (11.4 oz)
Fresh basil – 10g (0.3 oz)


Cinnamon Ice Cream
Milk – 500ml (2 c)
Cream – 200ml (2 c)
Yolks – 6
Sugar – 200gr (7 oz)
Powdered Milk – 50g (1.7 oz)
Cinnamon Powder – 10g (0.3 oz)


Fried Rice Pudding

Cook the rice in water and a pinch of salt until the liquid is evaporated. Then add milk and leave it to boil until rice is tender. Remove from the heat and incorporate the previously whipped cream with sugar and vanilla beans. Heat it again, stirring at all times until it becomes a little thicker (approx. 5 minutes). Remove from the heat and place it in a bowl to cool down.


When the rice is cold and compact make small rolls with your hands.  Open a small hole and fill it with white chocolate cream. Close it with a little more rice. Dip those rolls into flour, whisked egg, and panko or bread crumbs, and fry them with hot oil.


Lime and White Chocolate Filling

Melt the white chocolate in hot water stirring it at all times. At the end add the lime juice and zest and leave it to cool down.


Lemon Curd

Heat the sugar, butter, lemon juice and zest until it is all dissolved. Whip the eggs on the side. Remove the mixture from the fire and add the whipped eggs stirring at all times. Return it to low heat, stirring at all times, until the mixture boils and thickens. Remove from the heat and leave it to cool down.


Basil Meringue

Whip the basil leaves with sugar using a food processor. Then mix that scented sugar with the egg white to make a dough. Make rolls with that dough, place them on a dish and put them in the microwave at maximum power for 30 seconds (check the time on your microwave, leave them a little longer if necessary, until the meringue is cooked). Remove from the heat and leave it to cool down.


Cinnamon Ice Cream

Heat the milk, cream, powdered milk, and cinnamon. Whip the yolks with sugar on the side. Away from heat, add the whipped yolks to the milk mixture and stir. Heat it again, stirring at all times until it becomes a little thicker. Remove, let it cool down and place it in the ice cream maker.
